The Augustów Forest is the perfect place for mushroom picking. Its forests, mainly coniferous, are abundant with various edible mushroom species such as porcini, boletus, chanterelles, butter mushrooms, waxcaps, morels, and honey mushrooms. Everyone can find something for themselves here. The best time for mushroom picking is autumn, especially September and October, although the first mushrooms, like porcini, can appear as early as May. Porcini, known as the king of mushrooms, are best sought under pine and spruce trees. Boletus often grows under poplar, birch, aspen, and hornbeam trees, especially on slopes and in hollows. Butter mushrooms can be found in grass and coniferous forests, while waxcaps may be spotted in forest meadows, sometimes even during frosty weather. Chanterelles are available in June and early July, while honey mushrooms are often pickled to enjoy their spicy flavor. When foraging for mushrooms in the Augustów Forest, it’s important to remember that the best season for mushroom picking is September and early October. Every outing to the forest is an opportunity to discover not only flavors but also the beauty of the surrounding nature.
